so good!

made these little devils for a party last week...i couldn't believe how yummy they were to my tingling taste buds! i was inspired by my trip down the baking aisle, and the smell of the fresh lemons and fruit from the produce section!

so, i decided everyone should have the chance to indulge in their luscious lemony love!

Lemon Drops with a Berry on Top

ingredients:

1 box Lemon Cake Mix
1 jar lemon pie filling or lemon curd
1 tub lemon supreme icing
1 pint raspberries

the goodness:

prepare the cake mix according to the box directions. i made mini cupcakes, but you can do either big or small. fill muffin cups about half full. then, for mini's put in 1/2 tsp. of the lemon filling before baking. just plop it right down in the middle of the batter. for regular size cupcakes, i would use 1 tsp. of the lemon filling. then bake according to the directions on the box for cupcakes...about 18 minutes. let cool, then frost to your hearts content with that yummy icing and top with as many berries as you see fit!!

ps...i've also made this as a cake. just make 2 round cakes...sandwich them with lemon curd or pie filling, then ice with the lemon icing and top with berries....also very scrumptious and divine!
