a conference day miracle
okay, let's face it...the true test of a homemaker is to see if she has some great rolls/bread in her repertoire.
until Sunday, i did not.
i have tried and tried and have never been successful. we have always had someone in our circle of friends who has made the best rolls. and david would inevitably say after eating their rolls..."hey, you should get that recipe. those were some GOOD rolls!" and, trying to be the amazing wife that i am, i would get said recipe and try it. and fail. they were never as good. or we had to feed them to the country squirrels because they were the only ones who would dare eat them!
but, luckily amber moved here. and she could be in our circle, and make the best rolls. then give me her recipe. and promise that it was easy.
so, on Sunday, i tried it. i stressed and stressed about it. worked up my courage while watching general conference. then, i went for it!! and i am proud to say...after 8 years of trying...i can now make...
...THE BEST ROLLS EVER!! hooray!
what i love about this recipe is that it was EASY!! you don't have to activate any yeast or let them rise 50 times. i also got a little crazy and made cinnamon rolls with the leftover dough. I KNOW...CRAZY!! my only stress was about them rising. i always have bad luck in that category. david thought i was so funny...he just kept laughing at me and how obsessed i was with the rolls. thankfully he got us all out of the house and on a walk while they were rising the first time. and he also reassured me that the squirrels would eat them if they didn't turn out. what a great husband!! i must say though...he ate his fair share of the rolls...none went to the squirrels...and it made me do a little victory jig about how lucky i was to have such a great friend, with such a great recipe, and the patience to cheer me on!!
well, after my experience, i didn't think it was right to tempt you. i'm sure i wasn't alone in my situation...so, with amber's permission i give unto you....
...the recipe!!
The Best Rolls
5-6 C. flour
½ C. sugar
1 ½ t. salt
2 packages of yeast (4 1/2 teaspoons)
1 C. Milk
2/3 C. water
¼ C. butter
2 eggs (at room temperature)
Mix 2 C. flour, sugar, salt and yeast. Warm in microwave milk, water and butter. Gradually add the dry mixture to the wet and beat on medium for 2 minutes. Add eggs and 1 C. flour, beat for 2 more minutes. Add the rest of the flour and knead on dough hook, or by hand for 10 minutes. Cover and rise until double, about an hour and a half. Roll out dough, cut with cup and dip in melted butter, fold in half and place on cookie sheet. Let rolls rise again, about an hour. Bake on 375 for 15-20 minutes
*for cinnamon rolls...roll out and cover with topping...
1/4 C butter (melted)
1/4 C sugar
1/4 C brown sugar
2 cinnamon
splash of vanilla
then form a roll (start at one end and tuck as you go until you reach the other end) and cut into 1/2 inch slices. let rolls rise again, about an hour. bake on 375 for 15 minutes. top with icing (homemade or not...)
Good Luck! Let me know if you need help...because...let's face it...I have totally been there!! And hopefully you will just have a little miracle of your own!!

Mmm...yummy rolls. There's nothing like a good homemade roll to make the soul happy. :)
Your rolls look so scrumptious! Yes, any sort of bread baking can be intimidating. My cinnamon rolls were disappointing, but I'm very happy with my pizza/stromboli dough.
I will have to try this recipe...
ok, i am going to try these, but may be emailing you with some serious help questions.
